infrared temperature sensor emissivity

I am looking for an Infrared sensor for measuring TIG welding temperature at every pass (interpass temperature). Should I go for a fixed or variable emissivity instrument?

What is the difference between the two realy?

I would go for the variable emissivity since I assume you want to measure the molten metal? And I also assume there will be some sort of protective shield? By using a variable sensor you can calibrate for your specific set-up. ISZ
