VFD or not?
Are you talking the speed vs torque and current curves or the full speed curves?
For the starting curves, generally speaking, the most torque for the least current is the best.

Give us "the big picture". The high level overview. What, in big-picture general terms, are you trying to accomplish by doing this?
The selection criteria for an induction motor for a kitchen blender will be different from the selection criteria for an induction motor for an enormous rock crusher and those will be again different from an induction motor that you want to use in a high-performance motor vehicle and yet again different from an induction motor that you want to use for an electric scooter.
