How to Calibrate a WaterCAD Model

Am new to WATERCAD and have laid a hydraulic model for a community and attained hydrant flow test data. How do I calibrate the model to verify it matches field data? Do I just run fire flow analysis and adjust the global demand / roughness as the manual suggests until model matches field data? Or do I input my field flow data individually for each hydrant(node) and keep adjusting that pipes roughness until it matches field data. Or is there another way?
I am assuming I run the model checking fire flow analysis for either option. Then once the model is calibrated start inputting in all the average / max demands from there?
