Back in my old days of Unigraphics, there was a command similar to SW's hide and show commands - except that all items that were hidden, at the click of a button, would be shown and all items that were previously visible were hidden. Sort of a reverse hide/show command. In UG, I believe it was called "reverse blank all."

Is there a simple way (via a button click) to toggle in mass back and forth between items visible and those hidden within an assembly?

I have seen a "show all" macro somewhere, maybe there is an "invert show/hide" macro or one can be modified to do this.

RMB on a component(s) in the FM and select Invert Selection, then Edit > Show (or Hide) > All Display States

There is some of this functionality in SW. If you have some items hidden in an assembly you can RMB on the assembly in the feature manager tree and select Show with Dependents. This will show all items in that assembly. This works on the top level assembly as well as subassemblies.
The context toolbars have a hide or show components button when used in the feature manager tree that will hide all or show all of the components within the assembly selected. This along with show with dependents can be useful for hiding multiple entities.

This won't do exactly what you want, but I would suggest you try Lenny's ComponentStateSwitcher macro. It's a simple interface that allows you to easily change the hide/show visibility and suppress/resolve state of components in an assembly.

In Solidworks 2008 there is a feature that is exactly what reverse blank all is in UG. Under the assembly tool bar there is an icon called show hidden components or it can be accessed by right clicking into space in the graphics area.
