I need help finding someone who manufacturers stainless steel single acting pneumatic cylinders for linear operation to suit knifegate valves.

Call the valve manufacturer ie. ROVALVE, SALINA VORTEX. There are two ways to do what you are looking for. A spring return, which for a slidegate may get pretty big, or an auxilary air cylinder and solenoid that is activated on loss of air pressure to supply a double acting cylinder to close the valve. You only have one shot for the last option. You'll have to give the vendors you specific material requirements.
