What are the probabilities of having "Galvanic Corrosion" occur when using galvanized ASTM A-36 material with ASTM 300 series stainless steel?

Under what conditions? It is realted to the electrical conductivity of your electrolyte. If this is atmospheric exposure you should be fine. If this will be wet it may a different situation.

Rust never sleeps
Neither should your protection

If these two materials are coupled in the presence of an electrolyte, the probability of galvanic corrosion is 100%
