How do I find the design definition/requirements for a female G2 thread on a 2.5" OD pipe?

Are you asking for a 2.5 nominal diameter thread, class 2G, box (female) end? Do you know the pitch or thread profile?

I'm not sure, all I have is a 2-D drawing with a hand written translation from Japanese to English. It says "parallel thread G2" female".
