Does anybody know how secure EDrawing's is for withholding proprietary information from a client, such as dimension of a fabricated part? Or if there are any other options to make an EDrawing more secure for withholding such information?

If you have 2007, you can set up password protection to access the eDrawing. You can also limit the user from being able to measure the part in the eDrawing.

2006 allows for password protection as well. My supervisor's concern is that sending out E Assemblies of our systems will allow our clients to pull dimensions off of proprietary parts and build them themselves. So I guess my primary concern is whether or not there is a way to open an E Assembly in SolidWorks so you could take measurements off of a model.
 
3D Instant Website comes to mind. I'm sure you could set that up as a "view only" environment.
 
You can also do a Save As for your assembly to save in Part (.sldprt) format--which gives you the options of saving only external parts, only external faces, or everything. From that point, Save As eDrawing assembly format and make sure you uncheck the Enable Measure in the Options box when saving, as was mentioned above.

(Getting rid of some of the "guts" of your assembly can be a good idea, since with eDrawings you can make excellent use of the Section tool to see what's inside.)
