DIST, then snap to two objects. You'll get the following out:
Distance = 73.5196, Angle in XY Plane = N 81d40'2" W, Angle from XY Plane = S
86d6'1" E
Delta X = -72.5750, Delta Y = 10.6300, Delta Z = -5.0000
"Angle from XY Plane" should be what you are asking.

I'd say you have to create a temporary UCS aligned with one of the surfaces, then do a query of a line along the other surface. Perhaps UCS>>New>>ZAxis; use common edge between surfaces as the z axis, PLAN command, then query the 2 edge angles.
Don't have 2007, perhaps there's a quicker/slicker way?
