Digital Filtering: How to Resources

I'm struggling through reference papers on digital filtering. Can anyone recommend introductory information resources on this subject?

My application is to filter out noise from strain gauge data. I'm using a NI data acquisition pc card, LabView 5.1 Basic version, and MathCad 8 Professional.

I could use an analog filter, but I want to have more signal conditioning flexibility by using digital filtering.
 
I'd recommend "Frequency Analysis" by Bruel&Kjaer, but if that is too complex to start with then Hewlett Packard has a nice booklet #243 "Fundamentals of Signal Analysis".
