what calculations are included in a ball valve design package?

For proper answer, the question need more specific about what's the design package....

One possible answer is...."The calculations needed to prove compliance with the required and applicable standards for the valve being sold". For example, API6D, API608, ASME B16.34, ISO. MSS, etc. In addition, not every requirement needs to be proven by calculation. Test data can be sufficient proof in many cases such as stem strength.
