In later versions the settings that you need are under visualisation preferences using the Visual Tab, where there is a "General Display Settings" Panel. What you would need to do is familiarise yourself with how that works and then I would suggest record either a Macro or a Journal and place that under an icon on one of your toolbars to turn on this behaviour. You may however need a second Icon to turn it off since the first will not function as a toggle.
The possibility is also there that you can change your customer defaults so that the hidden edge style is always dashed by default. At that stage the standard pull downs may work for you.
Whatever the part settings should retain the display as you left when saved so if you have a preference that differs from other users in your organisation they'll find it annoying unless you share your setup with them.
Otherwise the out of the box settings for NX-5 and NX-6 at least are probably preferable once you get used to them after all the modelling environment now employs display methods that are probably superior to what the drafting standards are written around (manual drafting, doesn't have dim lines or dyamic rotation).
