Cycle Time Analysis

I am a MS Project newbie. I am trying to perform a cycle time analysis using Project, and I am just looking for Gantt charts. Each activity lasts a few minutes only. I want to enter the start and end TIME for each activity and want MS Project to calculate the duration. eg. Step 1 starts at 9:00 am and ends 9:05 am; Step 2 starts at 9:05 am and ends at 9:15 am etc. I am not able to enter clock time in Start and Finish columns, only days. How do I do this?
Each of my 'Projects' last about an hour on the same day!

I'm not following, a task duration of 5 minutes would still end in that day that you started in.

As a general rule, you enter the time durations to avoid dinking with the date/time info.

Here's what I am trying to do.

I am doing a cycle time analysis on patient visits for a medical office. They have say 20 patients coming in say from 9-12 in the morning. The clinic is collecting time data on each patient from the time the enter the door to leaving the clinic. They record the time it takes them at each 'stop' ie sign in, triage in & out, doctor exam in & out, procedure in & out, check out etc. I have start end time for each stop, for each patient. But I want to input it into Project so I can I can get a graphical display for the whole day. I am trying to analyse idle time and capacity.

Since all the patients are coming the same day, I need to define the start and end by TIME of day not by date. In my analysis say there are 30 patients for the day, the Start & Finish for every patient is the same day but different time of day. Therefore I looking for ways to change the Start/Finish by a time not the date as MS Project allows me.

Hopefully I have made myself clear.

OK, so just go int Options and change the date format to include time
