In an assembly there maybe multiple copies of a part. A change is made and all are updated. My problem is how do I break the link between the parts and make this part as its own, with no link with the others after? I seem to be stuck...help!!!

Copy part & then break link to original

Open the part, save as a copy with a different name. Then right click on the part you want divorced in the assembly tree and do a "replace component". Make sure the box for "all instances" is unchecked and choose the newly renamed part as a replacement. The renamed part can now be changed without affecting the others.
