condenser sizing rules of thumb

Hi,

For an ammonia based ice plant used in a dairy industry, is there any guidelines for condenser area ( sq. metre/TR )required? Please give me the likely sources of this information.

Also regarding spray ponds give me some idea about the area/volume required per TR and flow per nozzle.
