Compressible flow through valve given Cv/Kv 2

I've seen several equations for sub-critical, compressible flow through a valve given Cv or Kv, inlet and outlet pressure...Can someone shed some light on which to use and when?
the specific application is sat steam flow

If these mfgrs don't know the right equations, we're all in trouble.
