Changing and Retaining Settings

I am missing something very basic. How do you change and keep new defaults when changing them in (Tools, Options, System Options & Document Properties)?
It must be an easy thing to do but I am completely missing how to do it.

The Document Properties options are stored in the document. Document Properties for any new document come from the template that was used to create the new document. You can have as many different templates as you want. This is especially handy if you have different customers who want different drawing formats, etc.
 
Also, I store my template documents in a different directory than the default in the Program Files > SolidWorks directory. In fact, they're on a different hard drive with all my other document files, in case I need to reinstall SolidWorks--this keeps my documents safe. If you do this, you'll need to direct SolidWorks to look for your default templates in the new directory by going to Tools > Options > File Locations and specifying your new directory.
