Anyone have any idea if there is a program that will model how an object will react when dropped into water?
 
Yes, these exist. If you want a true 3d dynamic simulation for something like a torpedo being launched from a surface ship you are going to be up for some very long solve times. If you can accept that then check out OpenFoam

It all depends on what you want to do and are interested in, and how much time/money you want to spend.

Appreciate the suggestions. I noticed that OpenFoam is for Linux. Any chance that there is a version for windows?
 
I have seen some simple streamline analysis done in Solid Works. I don't now how much info you can get from that, but I think it can at least give you a sense of what the drag coefficients would be in wind tunnel testing.
