I think the flagship book would be "Pump Handbook" by Karassik, Messina, Cooper, Heald.
There is also a book called "Know and Understand Centrifugal Pumps" by Larry Bachus + Angel Custodio that is quite good.
A third would be "Pump Characteristics and Applications" by L.L.Faulkner (founding author).
