Why? I can tell you simply that is an effective method of transmitting data (differentially) at relatively high data rates (1MBit/sec) in very harsh enviornments (i.e. automotive). If you need to know exactly how it works, it might be easier to tell us the problem that you are trying to solve.

Try Microchip. Thay have a good app. note on can bus basics.
AN713 was enough to get me started.They also have examples
using their stuff of course.
