Sure, assuming you can find a DOS-based backup program for CDs. Most of them that I recall were designed for specific hardware, like Colorado tape drives or SCSI tape drives.

You'll need to do a search, ala:

If you have ghost, I'd just ghost it and back up the ghost image.
