Can any one tell me the funtion for the variation of velocity of water versus depth?
 
in a channel, pipe, over a weir, sheet flow? Supercritical, subcritical - what type of flow?

start with Mannings equation - you can find it in the Handbook of Hydraulics by Brater and King Chuck

Chow's Open Channel Hydraulics and Henderson's Open Channel Flow also both give some information about depth/velocity distributions. But, as mentioned above, it is also a fundtion of what kind of flow and what kind of channel.
