Can any one pl tell me why we are setting -10 v for Proximitor , if yes then how can we use the displacement vs voltage graph of any probe?

Do not fight them - joint them. You have one option to buy a readout instrument from Bently (or from others) which supply the power the probe needs and read it or
buy a converter which again supplies the power to the probe and gives 4-20 ma output.
Think that any other option will be more expensive and less relaible.

Is the -10V the 'gap' voltage which tells you that the sensor is the correct distance from the object? The -10V should be the mid-range of the sensor.i.e. 0 to -20V and your setting it to -10V. This would make sense because if the object moves towards or away from the sensor it will still be within the sensors range.
If it was gapped at say -15V then you would have less tolerance for movement one way and more tolerance the other.
