14 day vs 28 day

I was wondering if there is a big difference between the strength of concrete in 14 days as opposed to 28 days after being in a moist curing room? Thanks
 
Probably, in the "moist curing room" you've described.

High humidity slows concrete's cure rate, allowing it to develop increased strength. Colder temperatures do also.

Concrete can gain something on the order of 50% more compressive strength over a 180-day slow cure, if kept in a moist-cure environment as you've described.

How thick is the concrete? Thinner concrete reaches full-cure faster, but I wouldn't expect even a slab to reach full strength in 14 days, unless you heat it.

With almost all concrete mixes there will be a difference between the strength at 14 and 28 days. Some mixes will have a large difference some very little. You will need to get a break history on the specific mix or develop one for the mix to know for sure.
