I have a series of rollers, same bore configurations just different o.d. geometry. I have created a generic blank (default) part and in that part i have a cut extrude of the roller number. This was created via sketch text. My generic part has "XX". From this part i have created my 16 different profiles and want to change that text for each roller (ie 1T, 1B, 2T....). Can i do this with a design table? Thanks

Yes and No.

You will have to create the sketch text manually, but once created you will be able to control the suppression state with the DT.

And fillout an enhancement request on the Solidworks site.
