I understand that it shouldn't be possible to touch live parts from two phases at the same time ?.
Does anyone know where I can find a good explanaion of this ?, does it relate to fittings like the lights in one room being supplied from one phase and the power from another ?

No live parts or conductors should be touched by two phases. Two phases means two equal rms values of voltages, but their instantaneous values are different. Touching together means a short circuit or loading the two phases by a load. This explanation will be found in any basic electrical book.
