Hi,
So i'm fresh out of school and my degree's given me plenty of theoretical background...unfortunately, my real-world application knowledge is pretty limited. I'm looking for a good website that details all the different types of valves, how they work, how they're powered (if applicable) and what their primary applications are. Anyone out there that can help me?

One of the best sources of information on control valves (all commercial controls actually) is the Honeywell Engineering Manual of Automatic Control, form number 77-1100. You can see the huge pdf file by searching for "engineering manual" on their web site http://hbctechlit.honeywell.com.
I would suggest getting a copy for your bookshelf, if Honeywell still sells them (also available on CDROM).

Flag down a Fisher-Rosemount  salesman and ask him/her for  "the black book" for flow control
