how accurate will a manometer be measuring vacuum (-55kPa)at critical (sonic) flow rates? Will a digital manometer give me better results?

Be certain that you understand the differences between Range, Accuracy and Resolution of an instrument.  

Digital display might provide better resolution, but not intrinsically any better accuracy.  

A manometer might be appropriate for the magnitude of differential pressures you are attempting to measure, but other differential devices are available.  Check various vendors' web sites.
