How much do you guys charge for freelance mechanical work in consulting?

For example, a 2000 sqft restaurant. Do you guys charge by the hour or the number of drawings produced in order for the city to approve?

Many ways - by the sq ft, a percentage of building cost, by the job.

I usually use by the sq ft as a starting point and then figure by the job.
