heating off fabrciated steel rollers

I am looking for some guidance on heat up rates fro stainless steel fabricated rollers from ambient temperature to +200 degrees Celsius using thermal fluid oil. What I am concerned about causing too high a stress in the fabrication due to large temperature diffentials during the warm up cycle. Is the heat up rate differnt for mild and stainless steels?
Is there a recomended heat up rate for stress releiving,purposes/
