My question is: Are there any written testing methods, procedures or specificaitons for the rip rap and gabion materials.

quite a few, I would suggest you check out the corps of engineers - they have extensive written specs indicating testing requirements that you may want to consider for both riprap and gabions.

AASHTO and ASTM standards re testing would have some procedures as well. You are likely looking for freeze thaw testing on rip rap materials etc.

From my own experience, when dealing with Gabion stone, the size requirements relate directly to the size of Gabion basket proposed. Apart from this, there are generic requirements fro strength, durability, rock type etc... that are recorded in lots of specifications, but its the grading which is often the key thing.
As for Rip-Rap, as well as looking at what the material needs to do, always check what materials are available locally. I was involved in a project , where no quarry within 200 miles could produce a material which would meet the Clients very exacting requirements, and this went on for a couple of years until the specification was changed.

I am now using ASTM D5519-94 for the Riprap materials test.

You may want to try the new ASTM 6711 for gabion stone fill specs. This ties in nicely with ASTM 975 which is for the specification of woven mesh gabions & mattresses.
