What's wrong with cutting piece 304 with air plasma and not with nitrogen?
 
Nothing is wrong with doing that. Compressed air will leave a highly oxidized edge that will have to be removed by grinding or other means. Nitrogen will give you a better cut edge.

The devil is in the details; she also wears prada.
 
And Argon will be cleaner yet.
If you use air you will have a lot of clean-up work, grinding the cut and maybe pickling to remove other oxidation.
