Unfreezing

Hi to All.

I have been asked if it is possble to make a cooling/freezing system inside a microwave oven.. The purpose for this is to unfreeze fish to -2° C without melting a thin shield of ice on the outerside of the fozen fish. Then it should be easy to brake this thin ice shield apart and start to refine the fish.

Does anyone know something about system like this or another way to do something like this.

Probably not achievable with microwave frequencies. Most fish have a fatty layer just under the skin. Microwaves couple rather well with fatty tissue, so you would likely get too much energy close to the skin.

Maybe possible with RF, if you could tune the thing properly to ignore the fatty tissue and couple with the muscle. Unfortunately, RF ovens are rather more sensative to non-homogenities in the product being heated, and tend to arc.

I can see there is some problems with microwave for this purpose. I know that in a houshold microwave oven, the fish
will start a litlle frying from the outerside by unfreezing it, is this because of the ambient temperature in the oven ?
or is it as you say, because of the fatty layer of the fish.

I am a cooling technichian and I know just a litlle about microwaves,but i do know it is not the ambient temperature in
the oven there starts the frying outside, it is the effect there is to high, I think.
Is it possible to find a Link witch describe the heat transfering, acording to microwaves, in foods.
