ACI has ACI-301 that is their recommended structural spec that coordinates with the code and their other documents. I was wondering what the equivalent documents for Steel, Wood, wood trusses and CMU that could be used as a reference in general notes. Any help would greatly be appreciated.

Steel - I don't think AISC has any standard project specifications..could be wrong but I can't recall ever seeing any.
Wood - Same with wood
Trusses - Check with the Truss Plate Institute (TPI)
CMU - Look for ACI 530.1

The following might help, but I don't know if they are exactly what you are looking for:
Steel: Code of Standard Practice for Steel Buildings and Bridges, AISC 303
Masonry: Specifications for Masonry Structure, TMS 602/ ACI 530.1/ ASCE 6
Steel Deck: Code of Standard Practice, SJI COSP
