Three Phase Separator Performance

While specifying the performance requirement for a three phase separator in an oil and gas central processing facility kindly let me know the following:
- typical oil in water and water in oil carryover.
- liquid carryover in gas outlet.
I would like to know if there are any guidelines to be followed during concept engineering phase so that my separator is not over/under designed.
