The use of expression builders in MS Project?

Hi Folks,
I have just started to use MS Project and I wish to use some of the expression builders to calculate some quite complicated functions for me. I need Project to calculate the % work completed on a certain task for a specified period of time. Can anyone aid me in my efforts?
