I need to determine the orientation of a tower with respect to true North from a supplied surveyor's plot which shows a leg heading of S88°44'14"W. Am I correct in interpreting this to mean "yaw 88.7° from South toward West" resulting in an absolute heading of 268.7°?

You are correct. The bearing you refer to is 268.737 degrees azimuth (clockwise from true north).

Do not assume the bearings are in relation to true north. They may be magnetic, grid, or some other basis. Check with the surveyor who did the survey.

In the preparation of a plan, a good surveyor will label the north arrow to identify it - true north, magnetic, etc. If there is no label on the north arrow shown on the plan, definitely ask the surveyor who prepared it.
