Soft iron or low carbon steel ring type gasket for ASTM A 105 flange

For a flange of ASTM A 105 material I am looking for the proper ring type gasket material. Should I use soft iron or low carbon steel for the gasket material?

The hardness for ring type gaskets is shown in vendor catalogs. However, where can I find hardness data for flanges ranging from carbon steel and low chrome to stainless steel?

Any help would be highly appreciated.

Why don't you consult with a gasket manufacturer regarding applications? Why re-invent the wheel?
