What version of Solid Edge are you running?
Try going to Style... under the format menu and adjusting the dimension style(s) you are using in the profiles/sketches. The text height and arrow size as well as much more is controlled there.
I asked what version you're running because the graphic display of some entities has changed throughout revisions because of the way dimensions and contraints were sized when zooming a profile.
