Keep in mind that if you change the project calendar, the resource assignment will determine when the work is scheduled, not the project calendar. You must change the resource calendars as well.
Calendar changes work differently in 2003 and previous versions vs. 2007 version of the software. In 2003 and lower you can go into Tools --> change working time --> drag select the day titles across the top of the calendar to select what you want to change. 2007 is a bit harder - you must use the date ranges and values at the bottom of the form to make your changes.
You can change the calendar once and copy it into the organizer so it will be available for your installation of MS Project. Tools --> organizer --> calendar -- copy the changed calendar on the right to the left side and the changed calendar will now be available for future projects and will not have to be changed for each project.
Books - I have helped write a few. It will depend on the depth of the knowledge you are looking for. I can strongly recommend that you attend a GOOD class - not a low level cheap class. In this product, you get what you pay for in training. For a good basic, easy to understand book, get the Microsoft Step by Step series book and it will get you going. See my website for years of tip articles.
Good luck
