Is it a good practice to keep materials in mid-coated condition for a couple of days? Please Advise.
 
Do you mean, as in, interrupt your process and let everything hang there while a labor issue is resolved, then restart the process as if nothing happened?

I suppose you can try it, but do allocate extra inspection time/labor, and be prepared to restart the process if, e.g., the hanging parts have rusted or become contaminated by dust or bugs.
