What program(s) do you suggest for the drawing of process&instrumentation diagrams (P&I-D) with Mac-computers? Is there any experience?

OmniGraffle. No experience with P&ID specifically, but plenty impressed for general diagramming. Suspect there'd be a library of symbols somewhere you can use.
