What would be the best way to cut irregular shapes
out of 1/8" glass with a finished edge
 
Waterjet cutting is quickest and fastest. They are several other methods, so if you can give a little more information it would help to get you pointed in the right direction.

Here is just one company to show you about the method. There should be a provider in your area to do a test for you.

 
To be more specific the irregular shape is for a custom motorcylce mirror, 1/8" mirror (convex prefered). The perimeter of the shape needs to have a clean edge, the glass will be recessed into the mirror housing (cnc machined) when assembled to two will come together. I would like to have the two components to match each other with only a slight difference in tolerance to fit. Having an unfinshed edge will easily be seen.
