I'm an architect woking on a new house. Inspector is asking for water riser diagram and water supply fixture unit calculations for all supply piping in house. Any guidance for where I might find a company / firm / indivdual who performs this service?

You could contact a plumbing contractor. Often they perform these duties for residential construction (if they have the appropriate license).
