I'm making a cap for a product that could be submerged, is Nylon 6 a good choice, it meets my temp. requirement but not sure about the water.

Nylon 6 will absorb water and swell by some amount in the long term . If you need any accuracy, one of the engineered plastics such as delrin might be a better choice.
