how to roll sheet metal?

It looks like this video may be able to help you with the curve, then use the curve to extrude the sheet metal with a specific thickness.

OK. I create one helix curve, offset it with sheet thickness, then connect the two curves. Now I can extrude from a close curve. Looks could do the job. Thanks.

Select the curve and extrude in the direction of the width of the coil.

Now take this into NX Sheet Metal and run 'Convert to Sheet Metal'. You can then create the flat pattern.
