Todd,
I am trying to understand your problem, FIrst of all we should take a look at what service pack you are on. Second of all, the hems, should act just like the miter flange when it arrives at a corner. I tried what you said and I took a simple (flat rectangular part with a sqaure notch cut out of one corner), applied sheet metal bends (which of course there were none), and then began putting hems on it, that meet at a common corner. The results I acheived were to have the hems meet, and the appropriate cut was made for clearance. It worked for both outside and inside corners.
Also, with hems, you do not have the ability to edit the "profile" beyond the predefined hem types offered. You should be allowed to switch from one type to another, and change certain parameters, but you will not be allowed to create custom profiles.
So lets try and figure out why yours does not work that way.
Can you tell me which service pack you are currently on, and just how you went about trying to create the hems?
This would be helpful to figure this situation out I am currently using SWX 2001+ SP2.0.... You?
