Why do you think the discharge temperature of a gas compressor remains high after the machine has tripped?

There is a lot of mass in a compressor cylinder. Every bit of it eventually reaches the gas temperature. It takes a while for that heat to transfer to somewhere else.

Could it also be that the valves to the downstream cooler have closed thus trapping the heat? Like you said the heat transfer would take a while.

The BTU in the steel is many orders of magnitude greater than the BTU in the gas at the same dT to ambient.
