Liquid often has bubbles of gas in it; you want them to pass through only once. In a downward flowing stream, you have to fight the bubbles' buoyancy to make them go down, and there may not always be enough velocity to do that.
Similarly for gas streams; they may carry blobs of liquid or particles, and you want gravity to help send them on their way.
