Is there a way to assign some flexibility to a part? By this, I mean the springiness that a spring or o-ring has. I'd like to simulate (with Physical Dynamics) the installation of a snap ring using a tapered tool.

If you want to simulate the physical dynamics of your flexible O-Ring, I've had success in the past with COSMOS Works - I don't know of a way in SolidWorks to simulate - those physical dynamics. I believe you can assign property values.
